When it comes to Mexican cooking you must first understand that there is no single Mexican cuisine-- there are several cuisines that share much in common. Each variation has it own distinct characteristics. Michoacan, for example, is best known for its corundas, incredibly delicious tamales. Mention Oaxaca and its exquisite moles spring to mind. And Puebla is synonymous with chicken in a sauce of pumpkin seeds. You'll also find tacos and burritos in Mexico, of course. Both are wonderful, but Mexican cuisine encompasses much more. The food is exotically sophisticated and ranges from something as simple as a fragrant tortilla to one of Mexico's crown jewels, Barbacoa: succulent lamb wrapped in maguey leaves and cooked in a stone-lined pit.
